Classic Tomato Soup Recipe

Ingredients: - 2 tbsp olive oil - 1 large onion, chopped - 2 cloves garlic, minced - 1 (28 ounce) can crushed tomatoes - 4 cups vegetable broth - 1/2 cup heavy cream (optional) - Salt and black pepper to taste - Fresh basil for garnish

Instructions: 1. Heat olive oil in a large pot over medium heat. Add chopped onion and cook until softened, about 5-7 minutes. 2. Stir in minced garlic and cook for another minute until fragrant. 3. Pour in crushed tomatoes and vegetable broth. Bring to a simmer, then reduce heat to low, cover, and cook for 20 minutes. 4. Carefully blend the soup with an immersion blender until smooth. Alternatively, transfer in batches to a regular blender and blend until smooth (be cautious with hot liquids). 5. Stir in heavy cream, if using, and season with salt and pepper. Heat through gently, do not boil. 6. Ladle into bowls and garnish with fresh basil.
